Achiote Oil
Achiote oil also known as annatto oil is popular in several Puerto Rican dishes.
Ingredients
- 3/4 cup Extra virgin olive oil
- 2 tbsp Annatto seeds The seeds can be found in the Latin section of the grocery store spice aisle
Instructions
- Place the olive oil in a saucepan over medium high heat. Stir in the annatto seeds. Continue to simmer over low heat.
- Stir the oil mixture frequently for 5-10 minutes. Take the oil off the heat and allow to sit for up to 30 minutes. As the oil sits it will continue to intensify in color.
- Strain the oil before using and discard the seeds. Refrigerate any unused oil.
Notes
Do not allow the seeds to sizzle. If the seeds turn black, the oil will become bitter and you will need to start over.
